Pumpkin Potato Soup
Ingredients:
- 500g Potatoes
- 500g Pumpkin
- 2 Carrots
- 1 Onion
- 2 tbsp Butter
- 1 Bunch of Herbs (e.g., Parsley, Chives)
- 1 Liter Vegetable Broth
- 100ml Cream
Preparation:
- Peel and dice the potatoes, pumpkin, carrots, and onion.
- In a large pot, melt the butter and sauté the onion until translucent.
- Add the potatoes, pumpkin, and carrots, and sauté briefly.
- Pour in the vegetable broth and cook the vegetables until soft.
- Puree the soup until a creamy consistency is achieved.
- Add the cream and stir well.
- Finely chop the herbs and mix them in.
- Season with salt and pepper to taste.
